I buy my salmon fillets from the Scottish Lochs from producers such as Loch Duart and Wester Ross Salmon
The fish swim in 99% water to 1% fish and are hand reared and hand fed without antibiotics but using Wrasse to control parasites.
Technique
My own recipe of salt and unrefined sugar gives a slightly sweet aftertaste and the dry cure is as close to a Scandinavian cure as you will find because im not injecting the fillets with brine which is a method larger producers use to keep the weight up for more profit.
